Ecogenya Gourmet Maitake is a 7:1 dual extract (enzymatic and hot water) of organic Maitake (Grifola frondosa) fruiting bodies — the same extraction as our standard Maitake — milled fine so it dissolves straight into a simmering pot. It is part of our Gourmet everyday range, made as a culinary ingredient for cooks rather than as a licensed supplement.
Maitake is known in Japan as hen of the woods, a frilled cluster mushroom prized in kitchens for its rich, peppery-savoury flavour. Extracting it concentrates that character into a powder you can use year-round without hunting for fresh clusters. We use fruiting bodies only, never grain-grown mycelium, and verify each batch at a minimum of 35% beta-glucans.
Flavour and how to use it: deep, earthy and savoury with a gentle peppery edge. Whisk it into stocks, soups, stews, gravies, risotto and pan sauces, or fold it into a mushroom rub for roasted vegetables. It also blends into smoothies if you prefer to drink it.
