Ecogenya Gourmet Lion's Mane is a dual extraction (enzymatic and hot water, with no solvent) of organic Lion's Mane (Hericium erinaceus) fruiting bodies — the same extraction as our standard Lion's Mane — milled into a fine, cream-coloured powder that dissolves cleanly in hot or cold liquid. It is part of our Gourmet everyday range: culinary-grade mushroom extract sold as a food ingredient, made for daily use in the kitchen.
Lion's Mane is the shaggy white mushroom often compared to crab or lobster when cooked fresh. Extracted and dried it becomes something gentler, a mild powder with almost no bitterness, which is why it is the most popular mushroom to add to coffee. We use fruiting bodies only, never grain-grown mycelium, and verify each batch at a minimum of 35% beta-glucans.
Flavour and how to use it: mild, subtly sweet and easy to hide. Stir a small spoonful into coffee, tea, oat milk or a smoothie, or work it into pancake batter, soups and savoury sauces. It will not overpower whatever you put it in.
