Ecogenya Gourmet Chaga is a 10:1 hot-water extract of organic Chaga (Inonotus obliquus), wild-harvested from Canadian birch forests and milled into a smooth, fast-dissolving powder. It is part of our Gourmet everyday range: culinary-grade mushroom extract sold as a food ingredient, made for coffee, baking and everyday cooking.

Chaga is not farmed. It grows slowly as a dark conk on living birch, and the good stuff comes from harvesting it responsibly in the cold northern forests where birch thrives. Extraction matters here more than with almost any other mushroom, because the raw conk is woody and largely indigestible. Ours is a concentrated 10:1 extract of the conk itself, verified at more than 35% beta-glucans, with no grain, starch or mycelium filler.

Flavour and how to use it: deep and earthy with a coffee-like richness and a hint of natural vanilla. Stir a small spoonful into coffee, tea or hot cocoa, whisk it into a chaga latte with the milk of your choice, or add it to smoothies, oatmeal, broths and baking.

There is a lot of discussion around which parts of the mushroom should be used for extraction. Here is a short explanation:
